Travel Market Sandwich

INGREDIENTS
½ fresh baguette, 6 to 8 inches long
½ tablespoon (7.5 mL) extra-virgin olive oil
1 peach, sliced into thin wedges
1 heirloom tomato, sliced
1 scallion, sliced
2 teaspoons (10 mL) balsamic glaze or reduction
3 fresh basil leaves, roughly chopped flaky sea salt and freshly ground black pepper
RECIPE
Set the grill, if using, to 300°F (150°C).
Cut the baguette in half lengthwise and brush the cut sides with the olive oil. Toast the baguette halves in a toaster oven or on a hot grill if you have one available until the cut sides are golden brown, about 7 minutes.
Layer the peach wedges, tomato slices, and scallion on the bottom half of the toasted baguette. Drizzle with the balsamic glaze, then top with the basil and season with salt and pepper to taste.
Cover with the top half of the baguette and enjoy.
