Grilled Peach with Coconut Sugar Butter Glaze

INGREDIENTS

  • 2-4 ripe peaches, halved and pitted

  • 4 tablespoons unsalted butter, melted

  • 2 tablespoons coconut sugar

  • 1 cup vanilla ice cream

  • ¼ cup pecans, roughly chopped

  • 1 tablespoon coconut sugar, for dusting

  • 1 tablespoon extra-virgin olive oil, for drizzling


RECIPE

Preheat the grill to medium-high heat.

In a small bowl, combine the melted butter and coconut sugar to create the glaze.

Brush the cut sides of the peach halves with the glaze, making sure to coat them evenly.

Place the peaches on the preheated grill, cut side down. Grill for about 3-4 minutes, or until grill marks appear and the peaches are slightly softened.

Using tongs, carefully flip the peach halves over and continue grilling for an additional 2-3 minutes.

Remove the grilled peaches from the grill and transfer them to a serving plate or individual dessert plates.

While the peaches are still warm, place a scoop of vanilla ice cream in the center of each peach half.

Sprinkle the chopped pecans over the vanilla ice cream.

Dust the entire dessert with coconut sugar for an extra touch of sweetness.

Finish the dish by drizzling a small amount of extra-virgin olive oil over the top of the grilled peaches.

Serve immediately, while the peaches are still warm and the ice cream is starting to melt.
