Little Gem Salad with Dill Ranch

Something light and fresh, just like this perfect @hillhouse dress. This simple little gem salad with dill ranch will be my go-to lunch this summer, exactly like this white eyelet Ophelia dress, which will be the first thing I pick out of my closet on a sunny day.


INGREDIENTS

  • 2 bunches little gem lettuce

  • 1/3 cup shallots, thinly sliced

  • 1/4 cup panko

Ranch dressing

  • 3 tbsp vegan mayonnaise

  • 1 tbsp dill, roughly chopped, plus more for topping

  • 1 tbsp chives, richly chopped

  • 1 tbsp dijon mustard

  • 2 tsp onion powder

  • 1 garlic clove, minced

  • 2 tbsp lemon juice

  • 2 tbsp nutritional yeast


RECIPE

In a small bowl combine all ingredients for ranch dressing. Whisk thoroughly.

Wash your little gem salad and place on a serving platter or in a large bowl. Drizzle as much dill ranch dressing as you’d like and add shallots and panko on top. Toss well and serve.
