Heirloom Tomato Carpaccio

INGREDIENTS
4 large heirloom tomatoes, thinly sliced
8 cherry tomatoes, thinly sliced
1.5 tablespoons capers
8 cornichons, thinly sliced
3 tablespoons olive oil, plus more for drizzling
Juice of 1 lime
0.5 tablespoon red wine vinegar
3-4 garlic cloves, minced
1/2 cup Italian parsley, finely chopped
1 teaspoon crushed red pepper flakes
RECIPE
Carefully thinly slice the heirloom tomatoes and cherry tomatoes. Arrange the heirloom tomato slices on a large serving platter in a single layer.
Scatter the cherry tomato slices evenly over the heirloom tomatoes.
Sprinkle the capers and sliced cornichons over the tomatoes.
Finely chop your parsley.
In a small bowl, whisk together parsley, 3 tablespoons of olive oil, lime juice, red wine vinegar, crushed red pepper flakes and minced garlic until well combined.
Drizzle the dressing evenly over the tomatoes, capers, and cornichons.
Drizzle a bit more olive oil over the entire dish for extra flavor.
Let the carpaccio sit for a few minutes to allow the flavors to meld together.
