Heirloom Tomato Carpaccio

INGREDIENTS

  • 4 large heirloom tomatoes, thinly sliced

  • 8 cherry tomatoes, thinly sliced

  • 1.5 tablespoons capers

  • 8 cornichons, thinly sliced

  • 3 tablespoons olive oil, plus more for drizzling

  • Juice of 1 lime

  • 0.5 tablespoon red wine vinegar

  • 3-4 garlic cloves, minced

  • 1/2 cup Italian parsley, finely chopped

  • 1 teaspoon crushed red pepper flakes


RECIPE

  1. Carefully thinly slice the heirloom tomatoes and cherry tomatoes. Arrange the heirloom tomato slices on a large serving platter in a single layer.

  2. Scatter the cherry tomato slices evenly over the heirloom tomatoes.

  3. Sprinkle the capers and sliced cornichons over the tomatoes.

  4. Finely chop your parsley.

  5. In a small bowl, whisk together parsley, 3 tablespoons of olive oil, lime juice, red wine vinegar, crushed red pepper flakes and minced garlic until well combined.

  6. Drizzle the dressing evenly over the tomatoes, capers, and cornichons.

  7. Drizzle a bit more olive oil over the entire dish for extra flavor.

  8. Let the carpaccio sit for a few minutes to allow the flavors to meld together.
